Cuban Salad

Ingredients

3 cups cooked black beans

1 red bell pepper diced

1 yellow bell pepper diced

3 green onions thinly sliced

2 plum tomatoes seeded and diced

1 oz) (10 pkg frozen shoepeg corn thawed & drained optional

6 tablespoons extra virgin olive oil

3 tablespoons fresh lemon juice

4 tablespoons fresh cilantro minced

1 teaspoon black pepper

salt to taste

Directions

Combine all ingredients and toss. Cover and let stand at room temperature for 1 hour before serving.
